I am embarking on this diet today, after finding no relief from the symptoms of microcolitis, which was diagnosed a year and a half ago. Has anyone tried this? Is there any other flour other than almond flour that would be "safe" for cooking. The recipes predominantly call for this, and it is very expensive. Any help is very appreciated.

I'm allergic to nuts and my husband did a lot of cooking for me with ground sunflower seeds (without the shells of course) when I could still eat. You could do this or possibly use ground flaxseed as we have used that a lot too. The flavors will be different, but both the sunflower and flax have a nutty flavor that should work for this.

Try Coconut flour , extra benefit high in protein, Can be ordered on line or health food store. There are also other gluten free flours that might no be as expensive to us.
