Simply Soy

There is no denying soy is packed with many great health benefits. Soy products such as tofu, tempeh, and soy milk are very rich in protein; this protein is of very high quality because it is a complete protein, containing all the essential amino acids.

Soy is a rich source of lecithin and vitamin E. These natural antioxidants prevent oxidations of LDL or bad cholesterol. Soy is also rich in magnesium, which plays an important function for the bones, heart, and arteries. The two primary isoflavones in soy are genistein and diadzein which help to increase the flexibility of blood vessels.

There's a fair bit of controversy about breast cancer and soy -- since breast cancer runs in my family, I try to avoid soy until the research is more definitive.
